Orange, Olive Oil & Rosemary Focaccia

Ingredients
  

Dough
  • 440 g of flour 2 and 2/3 cups
  • 7 g instant yeast 1 sachet
  • 10 g sea salt crushed
  • 280 g of warm water 1 and 1/4 cups
Topping
  • 1 - 2 navel or Valencia orange washed
  • 3 sprigs of rosemary
  • 1 teaspoon honey

Method
 

  1. In a large bowl, whisk together the flour, instant yeast and sea salt.
  2. Pour in the warm water and half (25g) of the olive oil. Mix with a whisk and then your hands until the dough forms together and no dry areas remain.
  3. Coat your dough in a drizzle of olive oil until it is lightly coated. Cover your bowl with a damp tea towel and put in a warmer area to rest.
  4. Let your dough rise for 1 to 2 hours, or until it has doubled in size.
  5. Pour remaining olive oil into a medium sized stainless steel baking sheet.
  6. Transfer your dough into the prepared sheet and stretch dough towards the corners and edges of the pan.
  7. Cover and let the dough rise again for another 30 minutes to 1 hour depending on the warmth of your kitchen.
